St. Patrick’s Day Cream Cheese and Cake Mix Cookies

Hello! These cookies are a fun St. Patrick’s Day version of my-mans-favorite-mistake-cookies.

I love making these cookies! The sprinkles make them look so fun and cute. They always turn out perfectly, and they make My Man very happy. In the spirit of St. Patrick’s Day, I made the following changes to these cookies…

I used yellow cake mix, because I was thinking of the pot of gold at the end of the rainbow. I used rainbow sprinkles in the batter to represent the rainbow, and I used my St. Patrick’s Day sprinkles on the outside of the cookies.

Here’s what you’ll need:

1/2 cup butter (softened)

8 oz cream cheese (softened)

1 egg

2 tsp vanilla extract

1 box yellow cake mix (I used Betty Crocker Favorites Super Moist Butter Recipe Yellow)

1/4 cup rainbow sprinkles

1/4 cup St. Patrick’s Day sprinkles

1/2 cup powdered sugar

Ok. Let’s do this!

In a large mixing bowl, cream together the butter and cream cheese.

Add egg and vanilla.

Beat in cake mix until well blended.

Stir in 1/4 cup sprinkles until evenly combined.

Now it’s a party in a bowl!

Refrigerate for at least 1 hour.

Preheat oven to 350°

Line a baking sheet with parchment paper.

Form 1 inch balls with 1 TBSP of dough.

Pour St. Patrick’s Day sprinkles in a bowl or on a plate. Do the same with the powdered sugar.

Roll dough balls in sprinkles, then in powdered sugar. Now it’s a St. Patrick’s Day party! How cute are these??

Arrange on cookie sheet.

Bake for 8-10 minutes.

Allow to cool on baking sheet for a few minutes before moving to cooling rack.

Cookies will be soft when they come out and will set up a little more while cooling on baking sheet.

Store in an airtight container at room temperature.
