St. Patrick's Day Cream Cheese and Cake Mix Cookies

Ingredients

  • 1/2 cup butter softened
  • 8 oz cream cheese softened
  • 1 egg
  • 2 tsp vanilla extract
  • 1 box yellow cake mix I used Betty Crocker Favorites Super Moist Butter Recipe Yellow
  • 1/4 cup rainbow sprinkles
  • 1/4 cup St. Patrick’s Day sprinkles
  • 1/2 cup powdered sugar

Instructions

  • In a large mixing bowl, cream together the butter and cream cheese.
  • Add egg and vanilla.
  • Beat in cake mix until well blended.
  • Stir in 1/4 cup sprinkles until evenly combined.
  • Refrigerate for at least 1 hour.
  • Preheat oven to 350°
  • Line a baking sheet with parchment paper.
  • Form 1 inch balls with 1 TBSP of dough.
  • Pour St. Patrick’s Day sprinkles in a bowl or on a plate. Do the same with the powdered sugar.
  • Roll dough balls in sprinkles, then in powdered sugar.
  • Arrange on cookie sheet.
  • Bake for 8-10 minutes.
  • Allow to cool on baking sheet for a few minutes before moving to cooling rack.
  • Cookies will be soft when they come out and will set up a little more while cooling on baking sheet.
  • Store in an airtight container at room temperature.
