Country Girl Deviled Ham Salad

Hello! If you’re like me, I always end up with some leftover ham whenever I make one. I ended up with a little over a pound from last night’s dinner and decided to make some ham salad with it.

If you’ve been around for awhile, you know I just do my own thing when it comes to fixing food. This is no different. I just sort of threw things together that sounded good until I reached ham salad nirvana.

I decided my ham salad needed some hard boiled eggs in it. Then I thought about how I make egg salad. I use bacon in mine, so this would be like egg salad with ham, right? Nope.

I thought about what I put in my chicken salad (pickles, celery and onion) and decided to put pickles and onion in. On that particular day I didn’t have any celery, but I’m sure it would be good if you want to add some.

Then when The Girl Child saw that I had hard boiled eggs, she asked for deviled eggs. My brain sticks on the word “deviled.” I remember my dad used to eat deviled ham. I had no idea what that was, it never really looked good to me as a kid. I started thinking about “deviling up” my ham salad.

That’s a behind the scenes look at how things happen. This process ended with the creation of my Country Girl Deviled Ham Salad.

Here’s what you’ll need:

1 – 1 1/2 lbs ham (diced finely)

3 hard boiled eggs (diced finely)

2/3 cup dill pickle gherkins (diced finely)

1/4 large red onion (diced finely)

1/2 tsp salt

1/2 tsp McCormick California Style Garlic Pepper

1/4 tsp cayenne

1/2 cup mayonaise or Miracle Whip

1 1/2 TBSP brown spicy mustard

Ok. Let’s do this!

Start by dicing the ham and boiled eggs finely.

In a sealable plastic container, mix ham and eggs. Make sure the ham to egg ratio is to your liking. This was perfect for me, but maybe you want more egg or maybe your eggs were smaller.

Finely dice your gherkins and onion. Add those to the ham and eggs. Stir to combine.

Season mixture with salt, garlic pepper and cayenne. Stir to evenly distribute.

In a small bowl, mix mayo and mustard. Give it a taste to determine if you want more mayo or mustard.

Pour mayo and mustard mixture over ham mixture. Stir to evenly combine.

Put the lid on the container and place in refrigerator to chill for at least an hour. This is just my personal preference. I think it’s better after it chills and the flavors marry a little.

Serve this with crackers or on lettuce leaves. My favorite thing to do is make a sandwich with it!
