Ingredients

  • 1 lb lean ground beef
  • 1-2 depending on size bell peppers (diced)
  • 1 medium onion diced
  • 1 can Rotel tomatoes undrained
  • 1 small can tomato sauce
  • 3 cloves garlic minced
  • 1 tsp chili powder I used ancho chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp Worcestershire sauce
  • 1 family sized bag instant Success Rice
  • 2 cups cheddar cheese shredded
  • Parsley for garnish

Instructions

  • In a large skillet or Dutch oven, start browning your ground beef over medium high heat.
  • Season beef with salt, pepper, onion powder and Worcestershire sauce.
  • When beef begins to brown, add in peppers, onions and garlic. Let that cook until veggies are tender and beef is no longer pink.
  • Next, add in your tomatoes and tomato sauce. Season with chili powder and paprika. Stir to combine.
  • Add rice and bring to a boil. Cover and reduce heat. Let simmer for 5-7 minutes, until rice is tender.
  • Add approximately half of the cheese, stir until cheese is melted. Remove from heat.
  • Top with remaining cheese and parsley.
