Hello! I got a really good first haul from my garden the other day! Lots of fresh herbs, some bell peppers and a huge head of lettuce. I couldn’t wait to cook!!

These peppers weren’t exactly shaped to be stuffed, but they smelled so darn delicious that I wanted to use them anyway. I decided to just make “deconstructed” stuffed peppers, or what we ended up calling “unstuffed peppers”. I used everything I would normally use in my peppers and just chopped up my peppers and added them to to the mix. It was delicous!

My Man and The Girl Child both loved this meal. My Man even thinks this could possibly replace stuffed peppers. The Misplaced Redneck has been anxiously awaiting me getting this typed up so he can make it himself! So, here’s what you’ll need:

1 lb lean ground beef

1-2 (depending on size) bell peppers (diced)

1 medium onion (diced)

1 can Rotel tomatoes (undrained)

1 small can tomato sauce

3 cloves garlic (minced)

1 tsp chili powder (I used ancho chili powder)

1 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp pepper

1 tsp Worcestershire sauce

1 family sized bag instant Success Rice

2 cups cheddar cheese (shredded)

Parsley for garnish

Ok. Let’s do this!

In a large skillet or Dutch oven, start browning your ground beef over medium high heat.

Season beef with salt, pepper, onion powder and Worcestershire sauce.

When beef begins to brown, add in peppers, onions and garlic. Let that cook until veggies are tender and beef is no longer pink.

Next, add in your tomatoes and tomato sauce. Season with chili powder and paprika. Stir to combine.

Add rice and bring to a boil. Cover and reduce heat. Let simmer for 5-7 minutes, until rice is tender.

Add approximately half of the cheese, stir until cheese is melted. Remove from heat.

Top with remaining cheese and parsley.
