Quick Mexican Rice

Ingredients

  • 2 TBSP olive oil
  • 1 medium sized onion diced
  • 2 cups instant (Success))white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup tomato sauce I use Hunt’s tomato sauce with garlic
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 2 TBSP cilantro finely chopped (optional)

Instructions

  • Heat olive oil in a large saucepan over medium high heat.
  • Add onion, garlic powder, cumin, salt and cilantro. Stir constantly for approximately one minute.
  • Next, add in the broth and tomato sauce, stir to combine and bring to a boil.
  • Add rice and bring back to a boil.
  • Cover and turn off heat. Let stand for approximately 5 minutes, or until tomato sauce and broth are absorbed.

Notes

Sometimes I like to add some Mexican blend cheese to the rice while it’s hot.
