Quick Mexican Rice

Hello! One of the best things to come into my life is Success Rice. It saves my life on a regular basis. There are many recipes that I cook using rice, but sometimes when I just need a side of rice with dinner I turn to Success Rice. I love to cook from scratch, but I’m not ashamed to use a shortcut when I can.

Here’s my new favorite shortcut using Success Rice… Mexican rice! I really enjoy rice with Mexican food, you know the kind that you get at the restaurants? Well y’all, once again I’ve come up with a way to make it easily at home, and QUICK! Living in the middle of nowhere, you learn to make restaurant quality food at home. I’m not driving an hour for some good Mexican rice.

Here’s what you’ll need:

2 TBSP olive oil

1 medium sized onion (diced)

2 cups instant (Success) white rice (uncooked)

2 cups chicken broth

1 cup tomato sauce (I use Hunt’s tomato sauce with garlic)

1 tsp garlic powder

1 tsp cumin

1 tsp salt

2 TBSP cilantro (finely chopped) (optional)

Ok. Let’s do this!

Heat olive oil in a large saucepan over medium high heat.

Add onion, garlic powder, cumin, salt and cilantro. Stir constantly for approximately one minute.

Next, add in the broth and tomato sauce, stir to combine and bring to a boil.

Add rice and bring back to a boil.

Cover and turn off heat. Let stand for approximately 5 minutes, or until tomato sauce and broth are absorbed.

Sometimes I like to add some Mexican blend cheese to the rice while it’s hot. Sargento brand Mexican cheese melts really well and makes a wonderfully cheesy rice.

This is a great shortcut Mexican rice. It’s perfect for when you are busy making other things and want a side to go with your meal. I promise you it tastes just as good, if not better, than what you get at a restaurant. My family devours this.

Notes

Sometimes I like to add some Mexican blend cheese to the rice while it’s hot.
