Strawberry Cream Cheese Cookies
Hello! I’m stressed. My anxiety is in high gear. The anniversary of my mom passing away is this month. So, today I did some stress baking. I made chocolate chip cookies, some peanut butter treats for the 6 pack and then I made these strawberry cream cheese cookies. I just made up a recipe, hoping My Man would enjoy them, because he loves strawberries.
The batter tasted amazing, and the smell when you open the oven is divine! Of course, the real test was letting My Man try one. He loved it! Then The Girl Child emerged from her room and grabbed one. She said it was amazing and then had another.
Mission accomplished. A new cookie was born.
If you like to make some of these pink, pillowy cookies, here’s what you’ll need:
1 box Duncan Hines Signature Strawberry Supreme cake mix
1 stick butter (softened)
8 oz cream cheese (softened)
1 egg
2 tsp vanilla extract
1/2 cup powdered sugar
Ok. Let’s do this!
Cream together softened butter and cream cheese in a large mixing bowl.
Add egg and vanilla.
Beat in cake mix until well combined.
Refrigerate for at least 1 hour.
Preheat oven to 350°
Line a baking sheet with parchment paper.
Roll 1 TBSP of dough into a ball.
Roll ball in powdered sugar.
Arrange cookies on baking sheet approximately 2 inches apart.
Bake for 8-10 minutes.
Allow cookies to rest on cookie sheet for 1-2 minutes before moving them to cooling rack.
Cookies will be soft! They will continue to set while resting on baking sheet.
