Spicy Green Beans With Bacon, Peppers and Onions

Hello! Are you looking to change up your green bean game? This side dish could be the answer.

I love green beans. Especially when they are simmered for a few hours with onions and bacon. There is no beating that. It reminds me of my mom.

This method of making green beans is also a favorite here at the homestead. As much as I love my green beans with onions and bacon, sometimes I want something different.

These green beans are cooked in a cast iron skillet with bacon, red (or whatever color you’ve got) peppers, red onion, butter and red pepper flakes. They aren’t soft like beans you simmer all day, or like beans from a can. They are what I would describe as “tender crisp”.

All of the flavors married together equals maximum deliciousness. All of the colors mixed together is gorgeous, too. The flavor in these beans really pops. Even The Girl Child likes this side dish.

So, do you want to liven up your side dish routine? If so, here’s what you’ll need:

1 1/2 lbs green beans

4-6 slices bacon (cut into 1 inch pieces)

1/2 large red onion (diced)

1 red pepper (diced)

1 TBSP salted butter

1 TBSP extra virgin olive oil

1 tsp red pepper flakes

Salt to taste

Ok. Let’s do this!

Slice your bacon into 1 inch pieces.

Place bacon into a large cast iron skillet to fry.

When bacon is done, add butter to the pan with the bacon. (Leave the bacon grease in there!)

When butter is melted, add the green beans, peppers and onions. I like to use red, orange or yellow peppers for that pop of color, but use what you’ve got. I use red onion for the same reason, but, again, use what you’ve got.

Drizzle olive oil over vegetables. Toss to coat everything evenly.

Sprinkle red pepper flakes and add salt to taste. Toss again to distribute the spice.

Cook over medium high heat, stirring frequently, for 5-10 minutes, until beans are tender crisp.
