Springtime M&M Sprinkle Cake Mix Cookies
Hello! I love spring. Everything is bright, fresh and new. Well yesterday was a spring day, but there was nothing bright about it. It was gloomy and rainy all day. I decided to brighten my mood with a little spring baking.
I had a cake mix, some spring pastel M&Ms and some springtime sprinkles. I decided to make some cake mix cookies.
If you’ve never made cake mix cookies, you really should give them a try. They are really easy to make and they turn out perfectly every single time. They are soft and so delicious. Stored in an airtight container, they stay good (and soft) for a long time. Mine never last too long though.
I used a Betty Crocker Favorites Super Moist Butter Recipe Yellow cake mix for these cookies.
Here’s what you’ll need:
1 Betty Crocker Favorites Super Moist Butter Recipe Yellow cake mix
1/2 cup butter (softened)
8 oz package cream cheese (softened)
1 egg
3 tsp vanilla extract
1 tsp almond extract
1/4 cup springtime sprinkles
2/3 cup pastel M&Ms
Ok. Let’s do this!
Preheat oven to 350°
Cream together butter and cream cheese.
Whisk in egg, vanilla and almond extract until combined.
Beat in cake mix until well blended.
Stir in M&Ms and sprinkles.
Now it’s a bright cheery spring day, if only in the bowl!
Refrigerate dough for 30 minutes.
Line baking sheet with parchment paper.
Form balls with 1 TBSP of dough.
Arrange dough balls approximately 2 inches apart on baking sheet.
Place in oven and bake for 9-11 minutes.
Remove from oven and allow cookies to cool on baking sheet for 2 minutes before moving to cooling rack.
Cookies will be soft.
Store in an airtight container.
