Korean Ground Beef and Broccoli

Hello! Today I’m sharing an easy recipe for those days that you are just not feeling inspired about cooking a pound of ground beef. This happens to me all the time.

I can easily come up with ideas for chicken, but when it comes to ground beef I feel like it takes more effort to come up with something new. I’ve got plenty of ground beef recipes, but sometimes I just want something different. If you look for recipes it seems like you keep finding the same old things… soups, tacos, spaghetti, meatloaf, etc… I also like trying new flavors. I love marinating chicken in different combinations of ingredients. With ground beef I don’t have that option, so when I come up with a great combination of spices or a great sauce I get excited. This is one of those recipes.

We all loved the flavor in this dish and also think it would taste great with chicken. I know Korean beef and broccoli is usually made with steak or stew meat, but this ground beef works beautifully.

Here’s what you’ll need:

1 1/2 lbs ground beef

4 cloves garlic (minced)

1/2 cup soy sauce

1/2 cup orange juice

1/2 cup brown sugar

1 TBSP toasted sesame oil

1 TBSP cornstarch

3 cups cooked rice

3 cups steamed broccoli

1 medium onion (diced)

2 green onions (sliced for garnish)

1 TBSP sesame seeds (for garnish)

Salt to taste

Ok. Let’s do this!

In a large skillet over medium high heat, brown ground beef and break into small pieces. Salt to taste.

When beef is nearly browned, add onion and continue to cook until onion is soft.

In a medium sized bowl, combine soy sauce, orange juice, garlic, brown sugar, sesame oil and cornstarch.

Pour sauce over ground beef. Stir to combine.

Add in broccoli.

Lower heat to simmer and cook for 5 minutes.

Top with green onions and sesame seeds. Serve with rice.

Note: I increase the sauce by half when I make this because we like more sauce.

This is an easy 30 minute meal that is satisfying and amazingly tasty. It honestly tastes like what you’d get from your favorite restaurant. Next time you don’t know what to do with your ground beef, give this a try!
