Bacon Wrapped Roasted Garlic  and Herb Chicken Tenders (With Cheese and Vegetables)

Hello! I have a tried and true method for making tender, juicy baked chicken tenders. It’s very simple!

I start by brining the tenders for at least 30 minutes. I place the tenders in a bowl, cover them with water and throw in a handful of salt.

After they are done brining, I pat them dry with paper towels and liberally brush them with melted butter.

I told you it was easy.

After I butter them I season them according to whatever recipe I’m making. Then bake them in a 350° oven for about 25 minutes, or until they reach an internal temperature of 165°.

Last night I had chicken tenders thawed out, I just hadn’t settled on what version of chicken tenders I wanted to make. I also had a package of bacon. I always have bacon. So, I decided I was going to wrap those tenders in bacon. While I was thinking about it, I decided to throw some cheese on there. You can’t go wrong with cheese. Or bacon.

Next, I got an assist from Weber. Y’all, if you haven’t tried their seasonings, you need to… soon. Their Kickin’ Chicken Seasoning changed both me and my mom’s lives. She used it on pork chops, among other things, not just chicken.

Back to last night… I used Weber Roasted Garlic and Herb Seasoning.

So, I brined my chicken tenders, brushed them with melted butter and seasoned them with the Weber seasoning pictured above. Then I added cheese on top and wrapped them in bacon. We tried provolone, American, Cheddar and an Italian cheese blend. (Don’t use shredded cheese, trust me. The Italian blend was shredded and it falls off easily while trying to wrap the bacon!) All of the cheeses were amazing. Choose your favorite.

Then I added broccoli, red and green bell pepper and red onion to the pan and sprinkled the veggies with the same seasoning.

Super easy and it was delicous. If you’d like to try this, here’s what you’ll need:

10 – 12 chicken tenders

10 – 12 slices of bacon

5 – 6 slices of cheese (split in half)

Weber Roasted Garlic and Herb Seasoning

1/2 cup butter (melted)

1/2 bag frozen broccoli florets

1/2 bag frozen sliced red and green bell peppers

1/2 large red onion (sliced)

Ok. Let’s do this!

Start by brining your chicken tenders, if you choose.

Preheat oven to 350°

Brush chicken tenders with melted butter.

Place tenders on a sheet pan lined with parchment paper or foil. USE FOIL IF YOU ARE GOING TO CRISP YOUR BACON UNDER THE BROILER!

Place veggies in a bowl and pour any remaining butter over them.

Season tenders liberally with Weber Roasted Garlic and Herb Seasoning on both sides.

Lay 1/2 slice of cheese on top of tenders. My Man wanted provolone, I also made some with cheddar and some with American cheese. They were all very good, so use your favorite!

Wrap tenders with a slice of bacon.

Place vegetables around tenders, and on top if necessary. Use whatever vegetables you’d like. Potatoes are really good with baked chicken.

Sprinkle seasoning over veggies.

Bake for 15 – 20 minutes.

Remove from oven if you’ve placed vegetables on top of tenders. Move veggies off to the sides of the tenders to expose the bacon.

Place back in oven and bake for another 15 minutes, or until tenders reach an internal temperature of 165°.

Place under the broiler for 5 – 7 minutes to crisp bacon. DO NOT USE PARCHMENT PAPER UNDER THE BROILER. IF YOU ARE GOING TO USE THE BROILER TO CRISP YOUR BACON USE FOIL!
