St. Patrick’s Day Inside Out M&M Cookies
Hello! I want to share this delicious St. Patrick’s Day cookie recipe with you. It’s basically an inside out cookie dressed up for the holiday.
Inside out cookies are also known as reverse chocolate chip cookies. Normal chocolate chip cookies have a “vanilla” based cookie and chocolate chips mixed in, “reverse” cookies switch that around. They often consist of a chocolate cookie with white chocolate chips in them.
You can absolutely use white chocolate or vanilla chips in these. I just had a little bit of caramel chips to use up, and it turned out great!
Here’s what you’ll need:
1 cup flour
¼ cup cocoa powder
1 tsp baking soda
½ tsp salt
1 egg
¾ cup sugar
¼ cup brown sugar
2 tsp vanilla
6 TBSP chocolate chips (melted)
1 stick butter (softened)
¾ cups caramel chips
¾ cups green M&Ms
Ok. Let’s do this!
In a small bowl, whisk together all dry ingredients: flour, cocoa powder, baking soda and salt.
In a medium-sized bowl, combine egg, both sugars and vanilla.
Place chocolate chips in a microwave safe bowl. Microwave on high for 30 seconds. Stir and microwave for 30 more seconds. Chips should be melted.
Add melted chocolate chips and butter into wet ingredients and mix.
Slowly add dry ingredients into wet ingredients and fold until a soft cookie dough forms.
Fold in caramel chips and green chocolate-covered candies.
Cover bowl with plastic wrap and refrigerate for 30 minutes.
Remove cookie dough from refrigerator.
Line a baking sheet with parchment paper.
Preheat oven to 350°
Roll cookie dough into approximately 1 inch balls.
Place on baking sheet, about 2 inches apart.
Bake for 10 to 12 minutes.
Allow to cool on a wire rack before serving.
