Special pie for a special guy

Hello! One way I show love is through my cooking. I love making special things for special people. I came up with the idea for this pie because I wanted to make something special for My Man on our anniversary. I thought it up and hoped it would turn out as good as I imagined it would. Y’all, it’s a masterpiece.

It’s a French silk chocolate pie in a graham cracker and toffee crust, topped with whipped cream and toffee bits.

First, I made the toffee. (I had to restrain myself from eating all of it!) Then I combined it with the rest of the crust ingredients and it smelled amazing. That’s nothing compared to how delicious it smelled coming out of the oven. It was heavenly!

I think the best part of this recipe is how simple it is. Even if you’ve never made a pie, I promise you can make this one.

Here’s what you’ll need:

For the toffee bits:

1/2 cup butter

1/2 cup white sugar

2 TBSP water

Pinch of salt

For the crust:

1/2 cup toffee bits

9 graham crackers

1 TBSP brown sugar

4 TBSP butter (melted)

1/8 tsp salt

For the filling:

1 box Jell-o chocolate pudding mix (5.9 oz)

2 cups milk

1 tsp vanilla extract

1 cup Cool Whip

For the topping:

5 cups Cool Whip

Toffee bits

Ok let’s do this!

Start by making your toffee. This is ridiculously simple. How something this easy can taste so good is beyond me.

Place all of the toffee ingredients into a medium sized sauce pan. Bring to a boil over medium heat, stirring frequently.

Let toffee mixture continue to boil until it reaches 300°. It will be a golden brown color.

Remove from heat and immediately pour onto a baking sheet lined with parchment paper.

Allow to cool and harden. This happens fairly quickly.

Break toffee up and place between 2 pieces of parchment paper. Smash toffee into bits using a rolling pin.

Now lets make the crust.

Preheat oven to 325°

Place graham crackers, toffee bits, brown sugar and salt into food processor.

Pulse a few times to break up graham crackers and toffee bits.

Add melted butter to ingredients in food processor. Pulse until ingredients are well combined and evenly moistened by the butter.

Pour crust mixture into pie pan.

Use your hands to press crust into pan evenly.

Bake in preheated oven for 10 minutes.

Remove from oven and allow crust to completely cool.

While the crust is cooling make the filling.

Add Jell-o pudding mix, milk and vanilla to a large mixing bowl. Whisk to combine until mixture is thick (about 2 minutes).

Allow pudding mixture to sit for 5 minutes.

Beat in 1 cup of Cool Whip until combined.

Pour into cooled crust and spread evenly.

Finally, top pie with Cool Whip and sprinkle with remaining toffee bits.

Refrigerate for at least 3 hours until set.
