Monterey Chicken
Hello! How are you?? Things are so strange right now with this quarantine! It’s been great seeing everyone share online what they’ve been up to. One thing that everyone is doing now, more than ever, is cooking at home! I think that is fantastic. Cooking at home is so satisfying! I know a lot of people miss going out to eat at restaurants, but I always enjoy making restaurant quality meals at home. So, today I thought I’d share one of those recipes with you.
This dish was very popular at Chili’s. I never had it there, but my version is amazing, and I don’t think it could be matched! The whole family loves this Monterey chicken. You won’t miss going out when you can make something this delicious at home!
Here’s what you’ll need:
3 TBSP honey
3 TBSP soy sauce
3 TBSP Worchestershire sauce
1 tsp minced garlic
1/2 tsp salt
4 chicken breasts (I cut mine in half)
1 cup Monterey Jack Cheese (shredded)
8 slices bacon
8 TBSP BBQ sauce
Ok. Let’s do this!
Start by making the marinade.
Mix the honey, soy sauce, Worcestershire sauce, garlic and salt together. Place your chicken and the marinade in a gallon sized ziplock bag and squish it around to thoroughly coat the chicken in the marinade. Marinate your chicken breasts in this sauce for at least an hour, but it can be marinated overnight. Turn the bag over every once in awhile.
Fry your bacon and set on paper towels to drain.
You can grill your chicken or cook it in the oven. I do both and it is delicious either way!
Preheat your oven to 350° if you are going to cook in the oven.
Pour some of the marinade along the bottom of the pan and lay the chicken breasts in the pan. Cover with aluminum foil and bake for approximately 30 minutes, until the chicken reaches an internal temperature of 165°, the center is no longer pink and the juices run clear.
I grill my chicken breasts on a cast iron grill pan over medium heat. I brush each breast with some of the marinade while it’s on the grill. I cook them for approximately 5 – 7 minutes on each side to get nice grill marks.
If you are grilling the chicken, make sure the internal temperature of the chicken reaches a temperature of 165°, the center is no longer pink and the juices run clear.
When chicken is cooked, place on a baking sheet and brush each breast with BBQ sauce. Top with bacon (I break my bacon into pieces to fit on top of each breast) and cheese.
Place under the broiler for approximately 5 minutes until cheese is nice and bubbly.
I top our chicken with my fresh pico-de-gallo and serve it with my southwestern-rice and a southwestern style salad with my creamy-cilantro-dressing.
