Instant Pot Bacon Cheeseburger Rotini

Hello! I had an eventful day today. It was one of those days that made me just want to get dinner over with. We all have those from time to time. That’s when having an InstantPot really makes me happy.

My Man has Oklahoma National Guard drill this weekend. I wanted to make something that would give him some leftovers to take with him for dinner on Saturday night. His heartburn has been really bothering him, so I wanted to make something that wasn’t too spicy.

Bacon cheeseburgers would have worked, but I didn’t feel like dealing with making burgers and fries. I decided to make bacon cheeseburger pasta in the InstantPot. Easy, quick and tasty.

If you’re looking for a quick weeknight meal, give this a try. Here’s what you’ll need:

1 1/2 – 2 pounds ground beef

6 – 8 slices of bacon (crumbled)

1 medium sized onion (diced)

14.5 oz can petite diced tomatoes

16 oz pasta (I used rotini)

2 3/4 cup tomato juice

2 cups beef broth

2 cups cheddar cheese (shredded)

2 TBSP Worcestershire sauce

2 TBSP mustard

2 TBSP ketchup

1 TBSP McCormick Hamburger Seasoning

1/2 TBSP dried minced onion

Salt & pepper to taste

Ok. Let’s do this!

Fry bacon in large cast iron skillet, or substitute with precooked bacon.

Place bacon on paper towel lined plate to absorb grease.

Brown ground beef in cast iron skillet with bacon drippings. I like to brown my meat in the cast iron skillet because it seems to go quicker. I use 93% lean beef, so using the bacon drippings doesn’t really make it “greasy”, it just adds a little extra punch of bacon flavor. Alternatively, you can brown ground beef in the InstantPot set to saute. Lightly salt and pepper beef to taste.

Add dried minced onion.

When beef begins to brown add onion. Continue to cook until beef is no longer pink and onions are soft.

Drain fat and put beef in the InstantPot. If you browned the meat in the InstantPot, turn off the pot.

Add tomatoes, tomato juice, beef broth, Worcestershire, ketchup, mustard and hamburger seasoning. Stir to combine.

Pour uncooked pasta into InstantPot. Stir to combine, covering as much of the pasta as you can with the liquid in the pot.

Close lid and set to sealing.

Select “manual” or “high pressure” setting. Set timer to 6 minutes.

Allow InstantPot to do a natural release for 1 minute, then quick release the pressure.

Add crumbled bacon and cheese. Stir to combine.

Salt and pepper to taste.

We eat ours with bread and butter.
