For Chinese new year I knew I was going to make a stir fry for dinner. Out here in the middle of nowhere we don’t have any Chinese restaurants. Honestly I don’t know where the closest one is. My Man got me a really awesome wok for Christmas a couple of years ago and I can make food that is better than takeout. The only thing about cooking Chinese food at home is that you don’t get those awesome fortune cookies. I was on a mission to make my own fortune cookies to have at the end of our meal.

I started looking at recipes and discovered they are pretty simple to make. Why haven’t I been doing this before now?? Well folks, from now on we will get fortune cookies when we have Chinese food at home!

What are fortune cookies without a fortune? An empty cookie. My printer is still in storage, so I decided to write my fortunes out by hand. I found some funny ones online and made up some of my own. Then I cut the fortunes into strips to put inside my cookies.

These are so fun! You could make them for so many things. Anniversary… filled with special messages, birthdays, holidays, etc… I even saw someone using them for birth announcements!

If you’d like to make your own fortune cookies, here’s what you’ll need:

2 egg whites

1/2 tsp vanilla extract

1/2 tsp almond extract

3 TBSP cooking oil (I used canola)

1/2 cup flour

1/2 cup sugar

1 1/2 tsp corn starch

1/4 tsp salt

4 TBSP water

Preheat your oven to 400°

Set up your work area. When you make these you have to work quickly. The cookies will harden fast, so it’s best if you can have everything you need in one area.

You will need your fortunes, a coffee mug and a muffin tin.

In a medium sized bowl combine your egg whites, vanilla extract, almond extract and oil. Use a mixer (I used my hand held mixer) to combine the ingredients until frothy.

In another bowl, whisk together the flour, sugar, corn starch, salt and water. Blend until you have a sticky dough.

Gradually add the egg white mixture to the sticky dough. Mix until it resembles thin pancake batter.

Grease a cookie sheet (I sprayed mine with Pam) or use a silicone baking mat. I usually bake on parchment paper, but for this it doesn’t work as well as just using the greased cookie sheet. I sprayed mine with Pam before baking each batch of cookies.

Use about 1 tablespoon of batter for each cookie (I used my TBSP measuring spoon). Pour the batter onto your baking sheet and spread into a thin circle like a silver dollar pancake, but thinner. I only made 2 at a time because they harden quickly. Once you are used to the process of folding them you can absolutely make more at once, just keep in mind that you have to work fast!

Let the cookies bake for 4-5 minutes, or until they are nice and golden brown around the edges.

Now it’s time to shift into hurry up mode. Immediately use a spatula to remove the cookies from the baking sheet. Transfer your cookies to your work area. Place the fortune in the center of the cookie.

The cookie in the picture above was tragically lost in the process of learning the technique of folding the cookies. The sacrificed cookies were enjoyed by me and My Man, so they still fulfilled their purpose in this life.

As soon as the fortune is in the cookie, quickly fold the cookie in half, forming a half circle.

The next steps are, in my opinion, the most important. Thanks to iwashyoudry.com I learned this awesome method to shape my fortune cookies into their familiar shape.

Pick up the cookie (it should still be hot or very warm at this point) and move to the coffee mug. With the rounded edge facing up and the fold facing down, place the middle of the fold on the rim of the mug and pull the corners down.

As soon as you’ve shaped the cookie, quickly place it into the muffin tin. That is the perfect size to hold your cookie. The muffin tin will allow the cookie to retain it’s shape as it hardens.

Congratulations! You made fortune cookies! They are delicious and so much better than what you get at a restaurant. The Girl Child ate 5 right after dinner and then had some for a midnight snack.

You should get 20-24 cookies (including sacrificed cookies) out of this recipe. If you have any leftovers, just store them in an airtight container.
